3/4 cup of dairy-free milk
1 tbsp of chia seeds
1-2 tsp of Total Sweet Xylitol
1/2 tsp of cinnamon
a bit of vanilla extract
4 slices of bread (don´t use cheap toast bread, it will be too soggy)
This special breakfast has been created by Yolanda Dawson, a vegan food and sports addict based in Berlin. Topped with some warm berries it really is a delicious breakfast. If you are getting bored with your porridge, or smoothie bowls try these out!
1. Mix all ingredients, apart from the bread and coconut oil, in a big, shallow bowl. Put the bowl in the fridge and let it sit for about 15-20 minutes.
2. Dip each slice of the bread in the batter for about 20 seconds on each side. You don't want it to be too soft but if your bread is dry you might need to leave it in for a bit longer.
3 Heat a drizzle of coconut oil in a large frying pan over medium heat. Cook the bread slices on each side for a few minutes until golden brown. You have to be careful when ﬂipping your bread as it can break.
Top with anything you like and enjoy!
