Quick and easy lemon cheesecake

This incredible cheesecake looks as good as it tastes and couldn't be easier to make.

Courtesy of @lil_polish_lady_in_the_kitchen, this cheesecake is fast and simple to make. It still tastes naughty, but uses xylitol instead of sugar and makes a beautiful show stopper at the end of a meal.

Serves 12-15


  • 250g of half fat curd cheese (you can get it easily from polish shops in UK) 
  • 200g Total Sweet Xylitol 
  • 50g of soft butter 
  • 6 eggs 
  • 50g custard powder (with no sugar or potato starch or potato flour) 
  • Juice and zest of lemon 


  • Put all together to a bowl and use a mixer to combine until smooth. 
  • Bake in 23 cm round tin for 1h at 170 C.
