Waste Week: Cornflakes Cookies

The second of our waste week treats! Do you want something that’s a kid’s fan favourite…? Look no further than these crunchy cornflake cookies.
Ingredients:

1/2 cup of Total Sweet Xylitol

1/2 cup of white corn syrup

1 cup of peanut butter (try hazelnut butter or almond butter).

3 cups of cornflakes cereal.
Method:
- Line a baking sheet with parchment paper and add cornflakes to a large bowl.
- Cook Total Sweet® and syrup over medium heat until the mixture bubbles. Then stir in the peanut butter until smooth and combined.
- Combine the mixture and cornflakes and stir gently.
- Shape into circles and place on the baking sheet to harden for 15 to 25 minutes. Store in a covered container.
