Healthy Oat Bakes
Serves: 10 Cooking time: 30 minutes
If you enjoy a little treat every now and then, but don’t want to overdo it, then try out these healthy oat bars.
Jammed full of healthy natural ingredients they make a great alternative to traditional flapjack (the dried fruit does add some sugar, but there’s no golden syrup or granulated sugar needed).

Ingredients:

1 medium ripe banana, mashed

1/2 tsp ground allspice

50g dried mango, chopped

50g dried pineapple, chopped

40g coconut chips

One large free-range egg, beaten

2 tbsp sunflower oil

25g spelt flour or any flour

140g porridge oats
Method:
- Heat the oven to 180°C/fan 160°C/gas 4.
- Line a 7-inch square cake tin or equivalent size with baking paper.
- Mix all the ingredients together. Spoon into the tin and smooth the surface. Bake for 25-30 min until deep golden in colour. Cool in tin for 10 min, then lift out using the baking paper and cut into bars. Cool completely.
- Keep in an airtight box for up to 4 days or freeze for a month.
