Healthy Oat Bakes

Serves: 10 Cooking time: 30 minutes

If you enjoy a little treat every now and then, but don’t want to overdo it, then try out these healthy oat bars.

Jammed full of healthy natural ingredients they make a great alternative to traditional flapjack (the dried fruit does add some sugar, but there’s no golden syrup or granulated sugar needed).

Ingredients:

  • 1 medium ripe banana, mashed
  • 1/2 tsp ground allspice
  • 50g dried mango, chopped
  • 50g dried pineapple, chopped
  • 40g coconut chips
  • One large free-range egg, beaten
  • 2 tbsp sunflower oil
  • 25g spelt flour or any flour
  • 140g porridge oats

Method:

  1. Heat the oven to 180°C/fan 160°C/gas 4.
  2. Line a 7-inch square cake tin or equivalent size with baking paper.
  3. Mix all the ingredients together. Spoon into the tin and smooth the surface. Bake for 25-30 min until deep golden in colour. Cool in tin for 10 min, then lift out using the baking paper and cut into bars. Cool completely.
  4. Keep in an airtight box for up to 4 days or freeze for a month.
