Apple & Cinnamon Muffins
Serves: 12 Cooking time: 20 minutes
A great lunchbox staple packed full of wholesome healthy ingredients.
Ingredients:

110g butter, softened

110g Total Sweet Xylitol

175g plain flour

1 tsp bicarbonate of soda

2 tsp cream of tartar

50g ground almonds

1 tsp powdered cinnamon

2 free-range eggs

175g apple, finely chopped and peeled Plus: an additional 50g apple, diced and peeled. You will need a 12-cup muffin tin lined with paper muffin cases
Method:
- Preheat the oven to 160 degrees centigrade (fan ovens) or equivalent
- Whizz the butter and Total Sweet together in a food processor
- Add the flour, raising agents, ground almonds, cinnamon and eggs and whizz until combined
- Next, add the 175g of chopped apple and whizz
- Remove the blade from your processor, scrape any mixture back into the bowl and stir in the 50g of diced apple
- Spoon into the prepared tin and bake for about 20 minutes, or until a skewer inserted into the buns comes out clean
- Remove from the tin and finish cooling on a wire rack
